Ingredients:

  • 4 slices (120g) Whole grain or sourdough bread
  • 1/2 cup (125g) Creamy peanut butter
  • 1 medium (150g) Granny Smith or Honeycrisp apple
  • 1 tsp (2g) Ground cinnamon
  • 1 tbsp (15ml) Honey or maple syrup
  • 1 tbsp (15ml) Lemon juice or apple cider vinegar
  • 1/2 cup (120ml) Water

Instructions:

  1. Core the apple and slice it into thin, uniform discs about 1/8 inch thick.
  2. Submerge the slices in a bowl of water mixed with lemon juice for 2 minutes.
  3. Pat the apple slices completely dry with a paper towel. Note: Removing surface water is the only way to stop sogginess.
  4. Spread a generous, edge to edge layer of peanut butter on both slices of bread.
  5. Sprinkle cinnamon directly onto the peanut butter. Note: The fat in the butter holds the cinnamon in place.
  6. Arrange the dried apple slices in a single, overlapping layer on one piece of bread.
  7. Drizzle honey or maple syrup lightly over the apple slices.
  8. Top with the second slice of bread and press down gently.
  9. Slice the sandwiches into quarters or triangles.
  10. Place them snugly into the main compartment of your Peanut Butter Sandwich Bento Box.
