Ingredients:
- 4 slices (120g) Whole grain or sourdough bread
- 1/2 cup (125g) Creamy peanut butter
- 1 medium (150g) Granny Smith or Honeycrisp apple
- 1 tsp (2g) Ground cinnamon
- 1 tbsp (15ml) Honey or maple syrup
- 1 tbsp (15ml) Lemon juice or apple cider vinegar
- 1/2 cup (120ml) Water
Instructions:
- Core the apple and slice it into thin, uniform discs about 1/8 inch thick.
- Submerge the slices in a bowl of water mixed with lemon juice for 2 minutes.
- Pat the apple slices completely dry with a paper towel. Note: Removing surface water is the only way to stop sogginess.
- Spread a generous, edge to edge layer of peanut butter on both slices of bread.
- Sprinkle cinnamon directly onto the peanut butter. Note: The fat in the butter holds the cinnamon in place.
- Arrange the dried apple slices in a single, overlapping layer on one piece of bread.
- Drizzle honey or maple syrup lightly over the apple slices.
- Top with the second slice of bread and press down gently.
- Slice the sandwiches into quarters or triangles.
- Place them snugly into the main compartment of your Peanut Butter Sandwich Bento Box.
