Ingredients:

  • 2 lbs ground beef (80/20 lean-to-fat ratio)
  • 1 box (6 oz) herb-seasoned stuffing mix
  • 2 large eggs
  • 1 cup water or beef broth
  • 1/2 cup ketchup or savory BBQ sauce

Instructions:

  1. In a large mixing bowl, whisk the 2 eggs with 1 cup of water or broth. Stir in the dry stuffing mix and let it hydrate for 2 minutes.
  2. Add the ground beef to the bowl. Using your hands, gently fold the meat into the stuffing mixture until just combined. Do not overwork the meat.
  3. Press the mixture into a 9x5-inch loaf pan or shape into a 5x9-inch loaf on a rimmed baking sheet.
  4. Spread the ketchup or BBQ sauce evenly over the top of the meatloaf to create the savory glaze.
  5. Bake in a preheated oven at 350°F (175°C) for 55 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Let the meatloaf rest for 10 minutes before slicing to allow the juices to redistribute.
