Ingredients:
- 2 lbs ground beef (80/20 lean-to-fat ratio)
- 1 box (6 oz) herb-seasoned stuffing mix
- 2 large eggs
- 1 cup water or beef broth
- 1/2 cup ketchup or savory BBQ sauce
Instructions:
- In a large mixing bowl, whisk the 2 eggs with 1 cup of water or broth. Stir in the dry stuffing mix and let it hydrate for 2 minutes.
- Add the ground beef to the bowl. Using your hands, gently fold the meat into the stuffing mixture until just combined. Do not overwork the meat.
- Press the mixture into a 9x5-inch loaf pan or shape into a 5x9-inch loaf on a rimmed baking sheet.
- Spread the ketchup or BBQ sauce evenly over the top of the meatloaf to create the savory glaze.
- Bake in a preheated oven at 350°F (175°C) for 55 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing to allow the juices to redistribute.
